Bomb Chicken Satay

Makes 40 sticks | Prep Time 20 mins | Total Time 40 mins

INGREDIENTS
1 kg chicken breast

MARINADE
2 small onions, roughly chopped
4-5 garlic cloves, roughly chopped
4-5 coriander roots, roughly chopped
Small piece of ginger, grated
1 teaspoon yellow Thai curry paste

BOMB SAUCE TWIST
1 tablespoon Spicy Peanut Hot sauce
1 tablespoon Asian Spice Hot sauce

410 ml coconut milk
1 tablespoon palm or brown sugar
4 tablespoons vegetable oil to cook
Salt to taste

40- bamboo sticks soaked in water

DIRECTIONS
1) Cut the chicken fillets into strips of 4cm wide x 1ocm long x 5mm thick. Put into a bowl.

2) Take a blender/food processor and blend the onions, garlic, ginger, curry paste, BOMB SAUCE, oil, salt & sugar. Add this blend to the chicken to marinade along with the coconut milk. Mix well till all the pieces are well coated. Cover the mixture and keep refrigerated for a minimum 10 minutes or overnight.

3) Thread two pieces of the marinated chicken on each stick. (Make sure the bamboo sticks have been soaking in water- to avoid burning while grilling)

4) Cook on a hot Barbecue grill, stove top or in the oven!5-6 mins each side. Serve hot with HOT PEANUT BOMB SAUCE!
