Peri Peri Chicken
6 chicken legs
1 tablespoon smoked paprika
1 tablespoon garlic powder
Salt and pepper to taste
Peri peri marinade
Peri peri lime- BOMB SAUCE- use generously
4 Garlic cloves chopped up
1/2 cup chopped cilantro
1/4 cup chopped basil
1/2 cup olive oil or vegetable oil
Juice from 1 lemon
Salt to taste (and black pepper, if desired)
FOR SERVING: Chopped parsley, spicy chili flakes
Made a marinade out of all ingredients by mixing or blending them together. Make extra to use as a
dipping sauce. Add the chicken legs along with paprika and garlic to the marinade. Salt and pepper
You can cover and refrigerate for at least 30 minutes to 1 hour at this point if you’d like more
developed flavor. You can marinate them for 24 hours for deeper flavor penetration.
Bake the chicken for 35-40 minutes at 180 degrees C.
For Grilling- use a medium hot skillet greased with oil. For 30-35 minutes.
Serve with BOMB sauce PERI PERI LIME dressing on the side or as a dip.
