Tandoori Aloo Tikka
2 medium-sized potatoes
¾ tsp refined oil and extra for basting
1 tbsp yogurt
1 ½ tsp Bomb Sauce Himalayan/Extra Hot Sauce
¾ tsp cumin powder
¾ tsp garam masala powder
¾ coriander powder
¾ black salt (Kala namak)
½ tsp salt
1 ½ ginger -garlic paste
¾ tsp ajwain
¾ tsp chaat masala (commercial)
1) Wash potatoes, peel, cut into ½ cubes and parboil till half-cooked. Drain and set aside until cool.
2) Combine all ingredients for marinade in a bowl. Mix in potatoes and set aside for about 30 minutes.
3) Fix potatoes on to thin skewers 1” apart, and roast in a preheated tandoor, regular oven or grill, as given on p.3 for 5-6 minutes initially, and 3-4 minutes after draining and basting with oil.
4) Heat ¾ tsp oil in a frying pan and fry paneer over moderate heat till crisp.
Drain, sprinkle with chaat masala and serve hot.
